Short Ribs

Our Bison Short Ribs are large, tender and very meaty. Not gamely, and slightly sweeter than beef, our premium bison meat is a highly nutrient-dense food that's big on protein and minerals, but short on fat. Bison ribs are easy to prepare.

These ribs are known for their leaner profile compared to traditional beef ribs, offering a distinctively tender, flavourful and healthier option.  You will notice a difference with your first bite. Brisket

Our delicious premium Bison Brisket is leaner than its beef counterpart. This means you will not lose as much volume when you cook your bison brisket. Some bison chefs use a mayo smear as a binder, salt and pepper, and a brisket rub to season. Leave overnight in the fridge.  Let it cook. Your bison brisket will reach temperature before a beef brisket will. Wrap with aluminium foil smeared in our Bison Tallow.  Use a thermometer to determine doneness. Allow to rest. Bison brisket is packed with lean protein and never disappoints with an unmatched depth of flavour. It's the perfect cut for smoking or slow roasting.
